Kielbasa Krakowska – This Polish sausage derives its name from the city of Kraków.
Usually made from pork ham & shoulder, there are 4 cuts of meat cured and prepared separately, which is finally emulsified with peppers, all spice berries, fresh garlic, toasted coriander and fresh parsley & oregano.
Our rendition is cold smoked 🔥♨️ for 10 hours with coconut husks, as we like to stay local and sustainable with our ingredients & preparation. The whole process takes up to a week to prepare.
It is best enjoyed cold and thinly sliced (we can’t iterate this enough!) along with cheese crackers or on toasted Sourdough.
